Dan Tarrant lays a fresh trumpeter on the bench and invites a small group in close to learn how to break down a whole fish. This is a hands-on session. With guidance from Dan, guests get involved in the filleting process, learning where to start the cut, how to work along the bones, and how to get clean, generous fillets from the fish. Once the knife work is done, the fresh fish is turned into a simple ceviche on the spot. Sit and eat together, or pack your portion to take home. Groups are kept to ten, keeping things relaxed and close around the bench.
